Ever wondered what happens when traditional discipline, electric curiosity, and an artist’s madness collides? Hatch is your answer. With an approach to Japanese cuisine that plays hide-and-seek with convention, Hatch is the cool, worldly kid on the culinary playground with stories to tell with guiding philosophies of shu ha ri (守破離), shōmi hakkei (賞味⼋景), and ryuu ryuu shin ku (粒々⾟苦).
Chef Hashida showcases a diverse array of traditional Japanese dishes with his signature contemporary twist. Our Omakase menu features the most premium and seasonal ingredients prepared during the peak of their flavour.

In our commitment to serving freshly procured ingredients from Japan, a credit card information hold will be required to secure your reservation, and a charge of $200+ (Lunch) and $300+ (Dinner) will be made in the event of a no-show or cancellation within 72hrs.
