45 KEGANI A celebration of the once-a-year reunion between the deities Orihime and Hikoboshi, lovers separated by the Milky Way and allowed to meet only on the seventh day of the seventh month. Layered summer vegetables, crowned with Yuzu ice cream, evoke the ethereal image of the Milky Way, while delicate alyssum flowers glimmer like stars across the plate. Inspired by the calm beauty of a junsai pond, this amuse bouche features sweet and tender Hokkaido kegani crab, served on ice to gently cool and awaken the palate. The dish combines different textures and temperatures: the smooth feel of junsai (watershield), the bright acidity of sanbaitzu vinegar, and a special tomato ice cream made through lacto-fermentation. This process brings out natural umami and a light, tangy finish—perfect for the early summer heat. The nasturtium leaf adds a visual touch, echoing the floating leaves of junsai. Originally a tool for measuring soybeans and rice, masu carries a profound symbolism: “to increase,” “to fill,” and with repetition—masu masu—a blessing for prosperity and abundance. Inspired by this motif, the plating is designed in a squared form, with the three dots of sauce symbolizing tea fields mapped during the harvest season. Grilled Kagoshima wagyu is layered with mountain vegetables like butterbur and udo, then accented with matcha-infused beef dashi.
